Ingredients

For the mince mixture:

500g lean beef mince (or lamb)

1 slice of white bread, soaked in 1/2 cup milk

1 teaspoon ground turmeric

1 tablespoon apricot jam

2 tablespoons fruit chutney (like Mrs. Ball's chutney, if available)

2 tablespoons white vinegar

Salt and pepper to taste

1/2 cup raisins or sultanas

1/4 cup slivered almonds (optional)

For the topping:

2 large eggs

1 cup milk

For serving (optional): Cooked rice Chutney Sliced bananas Fresh cilantro (coriander) leaves

Method

Prepare the mince mixture:

Preheat your oven to 180°C

Heat the oil in a large frying pan over medium heat. Add the chopped onion and garlic, and cook until softened.

Add the curry powder, turmeric, coriander, cumin, cinnamon, and cloves. Stir for about a minute until fragrant.

Add the beef mince to the pan and cook until browned, breaking up any clumps with a spoon.

Squeeze out excess milk from the soaked bread and crumble it into the pan. Stir well to combine with the mince mixture.

Add the apricot jam, fruit chutney, vinegar, salt, pepper, raisins (or sultanas), and almonds (if using). Mix everything together and let it simmer gently for about 10 minutes. Adjust seasoning to taste.

Prepare the topping:

In a bowl, whisk together the eggs, milk, and a pinch of salt until well combined.

Assemble and bake:

Transfer the mince mixture to a greased baking dish and spread it out evenly.

Pour the egg and milk mixture over the top of the mince, ensuring it covers the entire surface.

Bake in the preheated oven for about 30-40 minutes, or until the topping is set and golden brown.

Remove from the oven and let it cool slightly before serving.

Chef's note

Bobotie is traditionally served with yellow rice (rice cooked with turmeric and raisins), chutney, sliced bananas, and fresh cilantro leaves.
