Ingredients

1 cup chickpea flour (besan)

1/2 cup water

1 1/2 cups sugar

1/2 teaspoon cardamom powder

2 tablespoons chopped nuts (optional)

Ghee or oil for frying

Method

In a mixing bowl, combine the chickpea flour and water to make a smooth batter. The consistency should be similar to pancake batter.

Heat ghee or oil in a deep frying pan over medium heat.

Using a slotted spoon or a boondi ladle, pour small amounts of batter into the hot oil, allowing the droplets to fall into the oil. Fry until the boondi turns golden brown and crispy. Remove from oil and drain excess oil by placing them on a paper towel.

Repeat the process with the remaining batter until all the boondi is fried.

In a separate saucepan, heat sugar and 1/2 cup of water to make a syrup. Stir continuously until the sugar dissolves completely and the syrup reaches a one-string consistency. Add cardamom powder and mix well.

Add the fried boondi to the sugar syrup and mix until the boondi is evenly coated.

Allow the mixture to cool slightly, then shape small portions into round ladoos. If desired, press a few chopped nuts into each ladoo.

Let the ladoos cool completely before serving or storing in an airtight container.
