Ingredients

one (1) medium bunch spinach

one (1) punnet mushrooms

salt as required

black pepper as required

half - one tsp crushed green chillie

half tsp fresh crushed garlic

one tub fresh cream

one (1) tblspn cake flour
9
one bag penne or tagliatelle pasta - brand of your choice

Method

Cut spinach into thin slices, wash and leave aside to drain.

Drizzle cooking oil into a medium sized pot and braise the spinach adding salt and black pepper as desired. Whilst cooking add half tsp of crushed garlic and allow to braise till it shrinks half in size.

Slice the mushrooms into medium sized slices and place into a pan. Add half a cup of water and allow to boil. Add half to one tsp green chillie, salt and black pepper as desired. Once boiled, pour the water out of the mushrooms and keep aside.

Add boiling water into a third pot, with a half tsp of salt and a dash of oil. Then add the contents of the packet of pasta and allow to cook for approx. ten minutes until al Dante.

Pour the contents of the fresh cream into a pot and allow it to come to a boil ensuring that the cream does not burn. once it comes to a boiling point, remove from stove and stir in one tblspn of cake flour to thicken up.

Lastly mix the cooked spinach, mushrooms and pasta in a bowl . Then add the thick and creamy fresh cream to it, mixing it through the pasta.

Garnish with feta cheese or fresh herbs .

Chef's note

Note - instead of fresh cream, you can make a white sauce with cake flour, butter and milk. Works just as well.
