Creamy Spinach Recipe

Ingredients

4 tablespoons butter

200g flour

1 onion (grated)

3 cloves of chopped up garlic

Half a cup of milk

Half a cup of thick cream

250g shredded cheddar cheese

200g grated Parmesan

Salt and freshly ground black pepper, to taste

a pinch of nutmeg

Half a teaspoon red chili powder

Half a teaspoon cayenne pepper

600g of chopped spinach

Method

Melt the butter in a large pan over a low to medium heat. Add the garlic and nutmeg. Cook, stirring frequently, until the onions have become translucent, about 3 to 5 minutes.

Slowly whisk in flour until lightly browned, about 1-2 minutes. Gradually whisk in heavy cream and milk. Cook, whisking constantly, until the sauce has begun to thicken after about 5 minutes.

Stir in the cheddar and parmesan cheeses until melted, about 1-2 minutes and then add the spices, season with salt and pepper, to taste.

Stir in the spinach until well combined, about 2 minutes

Serve immediately

Season with salt and pepper, to taste.
