Ingredients

1 whole chicken, cut into pieces

2 cups basmati rice, rinsed

2 tablespoons vegetable oil

1 large onion, finely chopped

4 garlic cloves, minced

1 tablespoon ginger, minced

2 tomatoes, chopped

2 carrots, peeled and diced

1 bell pepper (any color), diced

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground turmeric

1 teaspoon ground paprika

1 teaspoon ground cinnamon

1 teaspoon ground cardamom

Salt and pepper to taste

4 cups chicken broth or water

Fresh cilantro or parsley for garnish

Method

Heat vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides until golden. Remove the chicken and set aside.

In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic and ginger, and cook for another minute until fragrant.

Stir in the chopped tomatoes, diced carrots, and bell pepper. Cook for 3-4 minutes until the vegetables start to soften. Add the tomato paste and all the ground spices (cumin, coriander, turmeric, paprika, cinnamon, cardamom). Season with salt and pepper to taste. Cook for another 2 minutes to toast the spices, stirring frequently.

Return the browned chicken pieces to the pot. Add the rinsed basmati rice and mix everything together until the rice is well coated with the spice mixture.

Pour in the chicken broth or water, making sure it covers the rice and chicken completely. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for 20-25 minutes, or until the rice is cooked and the chicken is tender.

Once cooked, fluff the rice with a fork. Garnish with fresh cilantro or parsley before serving.
