Ingredients

1 1/2 kg meat (leg mutton)

4 tsp ginger garlic

4 tsp chilli powder

Little saffron

1 tin tomato paste (125g)

1 tblsp corriander and cumin powder

2 tsp lemon juice

1/4 tsp tumeric powder

2 tsp salt

2-3 cinnamon,cloves,cumin seeds,cardamom and black peppercorns

4 medium onions sliced

4 medium potatoes deep fried

1/2 cup ghee

2 tblsp yoghurt

Method

Marinate meat with spices, condiments and tomato paste and yoghurt

Braise onions in ghee until golden brown

Add marinated meat to this

Cook on medium heat for 40-50 minutes until tender

Add 1 cup water

Place potatoes over the kalya when serving

Garnish with dhania and green chillies
