Ingredients

1 cup pumpkin puree (unsweetened)

1/4 cup almond flour

1/4 cup grated Parmesan cheese

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Salt and pepper to taste

Olive oil or coconut oil for frying

Method

Begin by combining the pumpkin puree, eggs, almond flour, Parmesan cheese, baking powder, cinnamon, nutmeg, salt, and pepper in a mixing bowl. Stir until all the ingredients are well incorporated and a smooth batter forms.

Heat a skillet over medium heat and add enough olive oil or coconut oil to cover the bottom of the skillet. Once the oil is hot, spoon the pumpkin batter into the skillet, forming small fritters with about 2 tablespoons of batter each. Cook the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.

Once cooked, remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil. Repeat the process with the remaining batter, adding more oil to the skillet as needed.
