Lotus Scones

Ingredients

2 n 1/2 cups self raising flour

2 tsp baking powder

Method

Rub butter into dry ingredients. Add in

1/2 cup sugar

Whisk together 2 eggs

1 cup buttermilk

1 tsp vanilla essence

Pour into dry ingredients to form a sticky dough

Fill 3/4 way into muffin tray

Bake on 200 for 10 - 15 mins

Heat lotus spread in microwave for about 20 seconds

Pour spoonful over scones

Top with crushed lotus biscuit
