Ingredients

1 cup tomato sauce (ketchup)

1/2 cup fruit chutney (apricot or peach chutney works well)

1 tablespoon white vinegar

1 teaspoon mustard powder

Optional: a dash of hot sauce or chili flakes for heat

Heat the olive oil in a saucepan over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.

Add the tomato sauce, fruit chutney, Worcestershire sauce, soy sauce, brown sugar, white vinegar, mustard powder, salt, and pepper to the saucepan. Stir well to combine all the ingredients.

If using, add a dash of hot sauce or chili flakes for extra heat, according to your preference.

Bring the sauce to a simmer, then reduce the heat to low. Allow the sauce to simmer gently for about 10-15 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.

Once the sauce has reached your desired consistency, taste and adjust the seasoning if needed.

Remove the sauce from the heat and let it cool slightly before serving. Monkey gland sauce can be served warm or at room temperature.
