Oyster Mushroom Tacos

Description

Delicious meatless tacos, featuring gently fried oyster mushrooms and a tantalizing avocado crema.


  • 3 corn tortillas
  • 3 cups oyster mushrooms
  • 1 avocado (ripe)
  • 3 limes (juiced)
  • 1 tbsp olive oil
  • 1 tsp chives (chopped)
  • salt (to taste)




  1. Slice the oyster mushrooms thinly
  2. Blend avocado with lime juice and olive oil until completely smooth. Add salt as needed.
  3. Deep fry the oyster mushrooms until golden brown (1-2 minutes). Remove from oil, place on kitchen towel to drain, add salt to taste.
  4. Warm tortillas, add avocado puree and top with oyster mushrooms. Top with chopped chives and serve with a slice of lime.
