Tangy Sweet Potato Salad

To me this lovely combination of ingredients qualifies as ''Ambrosia"

An instant favorite in our house. We liked its colorful presentation and the flavor!

Ingredients

3 - 4 baby sweet potato cut into wedges

2 cloves garlic sliced

2 tblsp oil

1 and 1/2 tsp harissa paste (woolworths)

125 g butter

1/4 cup wellingtons sweet chilli sauce

2 tblsp lemon juice

Salt to taste

Assorted lettuce leaves

Danish feta cheese cubed

Radish thinly sliced

Coriander chopped for garnish

Method

Wash and cut sweet potato into wedges

Place onto baking tray

Drizzle over olive oil, salt and pepper

Bake at 200 deg till tender and golden

Keep aside

Heat oil and add garlic and fry for a few seconds and then add rest of ingredients

Cook till butter melts
8
Place lettuce leaves on serving platter
9
Top with sweet potato wedges and rest of ingredients
10
Drizzle over dressing and serve
